The Atrium restaurant at InterContinental Johannesburg Sandton Towers has unveiled a fresh new menu that is not only perfect for Gauteng’s sunny days and warm evenings but a range of diverse pallets as well.
Executive Sous Chef, at the Atrium, Phistos ‘Shimmy’ Shimanyana Sello has taken the restaurant’s cosmopolitan menu to new heights to suit the broad spectrum of local and international business and leisure travellers’ preferences, while also keeping dishes light, fresh and delicious.
Delicious Dishes
The salads and starters selection include Fricassee of chicken with a crispy chicken lollipop, spinach, chicken liver crème caramel and port reduction; Caesar and Green salads; and Chicken, halloumi and avocado salad.
The popular pasta menu includes Potato gnocchi with sage beurre noisette and roast vegetables with Napolitano sauce; Spinach and cheese ravioli; and Braised lamb shank farfalle.
Main dishes include a Lamb trio, Pork two ways, Herb crusted salmon, Sea bass, Chasseur chicken, Lamb curry, Beef oxtail, Grilled prawns, and a range of premium steak options served with marrow bone and onion rings.
Not-to-be-missed desserts include Chocolate torte, Lemon cheesecake, Fresh fruit salad; Ice-cream, Milk tart, and a local cheese platter.
Sustainability and Seasonal Ingredients
Chef Shimmy, originally from the North West, has been at the InterContinental Johannesburg Sandton Towers since September 2018.
He says that in line with Tsogo Sun Hotels’ practices as well as global trends, the food and beverage focus at the Atrium is on sustainability and sourcing of local seasonal ingredients.
